Sauce Ingredients

½ cup chicken stock< br>2 tablespoons of dry sherry< br>2 tablespoons of hoisin sauce< br>2 tablespoons of oyster sauce< br>1 tablespoon of bean sauce< br>1 tablespoon Oriental sesame oil< br>1 tablespoon distilled white vinegar< br>1 ½ teaspoons of Chinese chili sauce

Directions

  1. Thoroughly combine lamb, soy sauce, sherry, and hoisin sauce in a bowl. Set aside until ready to cook.
  2. Seed and stem peppers, then cut into ½ inch cubes.
  3. Peel and coarsely chop onion. Set peppers and onion aside.
  4. Stir cornstarch with equal cold water, then set aside.
  5. Place a wok over the highest heat.
  6. When the wok becomes hot, add one tablespoon of peanut oil to the center, then roll the oil around the sides.
  7. When the oil begins to smoke, add the lamb and stir-fry, pressing the meat against the sides of the wok until it loses its raw color and separates into small pieces, about 3 minutes.
  8. Transfer to a platter.
  9. Return the wok to the highest heat and add the remaining tablespoon of peanut oil to the center.
  10. Add ginger and garlic and sauté for a few seconds.
  11. Add vegetables and stir-fry until peppers brighten and onion becomes transparent, about 2 minutes.
  12. Return the lamb to the wok and pour in the sauce.
  13. Mix and bring sauce to a low boil.
  14. Stir in a little cornstarch mixture to lightly thicken.
  15. Reduce heat to low and simmer for 2 minutes.
  16. Serve at once over steamed rice, noodles, or bread on a heated platter or individual plates.

Serves: 2 as an entree; 6 to 8 as part of an Oriental meal.
